Please see picture attached, could anyone please advise min height I'd need to fit a mono pitched roof ?

A 1m rise will give you a 22 degree pitch. However you could trim it down to as little as say 750mm and settle for a 17 degree pitch.
What are your constraints in terms of rise?

Thanks for the info :-), it's an external workshop, my only constraints to be honest are neighbours, I've not got planning permission, so need to stick to regulation which I read was max height of 2.5 metre ? is that correct ?

You can go lower but that will restrict your choice in tiles.
Work within noseall's recommends and you'll be ok.

Max height of 2.5m only of within 2m of a boundary. Otherwise the ridge can be 3m and eaves 2.5m Max.

You can board and felt the roof with sealed laps, and then use any tile you like at any pitch.
