Moving Gas Cooker

I need to move my gas cooker to lay a new floor. The cooker is connected with a flexible hose ending in what I presume is a bayonet fitting into a socket coming from the wall.
Can I legally and safely disconnect the the cooker?
How does the fitting work - push, turn, pull etc ?
Does the gas need to be turned off until the cooker is reconnected, or does the fitting self seal ?

Any advice appreciated

its just like an overgrown lamp fitting, push and turn it we have one on ours, an yes it is self sealing (forgot which way it turns though, but as its behind cooker...........)
