Multiple layers of plasterboard?

Hello,
We have recently ripped the old kitchen out of our new house to find a big mess behind them.
Will be removing tiles but am unsure about what to do about the uneven walls mostly down to multiple layers of different plasterboard.
Do we need to remove the plasterboard back to the plaster and then hang drywall or reskim?
The walls will be holding kitchen units so am wary.

I'd find a local plasterer.
Take his advice and do as much unskilled work that you can to save money.
The plasterer could fill odd levels then skim the whole room.
Take as much kitchen stuff out as possible even if you're "camping" for a while.
Plasterers are pretty quick and would be a lot quicker than you fancying about with plasterboard
