New bathroom tiling

I am having a new bathroom installed, so everything is coming out back to the bare brickwork. I have had a few quotes and still am in doubt about certain things, so can anyone offer unbiased advice.

Is dot and dab better than plastering the walls - I know it's faster, but I was told the plaster would falls off under the weight of tiles?. My instinct is that dot and dab plasterboard would be weaker than plaster.

Should ordinary plaster be used? or sand /cement render? And what is tanking by the way?

Assuming I use dot and dab, does the shower area (in the bath) need to have moisture resistant boarding (what type?). One plumber told me the tiles and grout were water resistant so normal plasterboard was OK!

On the floor, does the plywood over the existing T&G boards need to be a minimum thickness? and does it need to be marine ply to resist water penetration? Do the joists under it need to be ventilated? How can this be achieved?
My anticipation is that the floor will get water on it and the bath will move slightly and let water run past the sealant down the sides of the bath - so I would rather do it right first time.
