Opening up chimney breast for cooker

Hi im opening up chimney breast for cooker , a couple of questions. I have put a new lintel in higher up , can I sink oak beam in at the front of this lintel to hold front bricks. Also on opening it up there's are bricks towards the back in an upsidedown v shape, can I remove these
