I want to board out a bit of my loft. I'd like to use 12mm OSB as the existing ceiling joists have already sagged and I want to keep the weight down. will this be alright for very occasional foot traffic?

You need 18mm osb or chipboard, you could use 12-15mm ply as its stronger weight for weight.Over a small area the weight difference is negligible.
