A fillet is narrower towards one end, so a 6oz end cut will be thicker than 6oz in the middle.

That piece looks thicker than I like.

The marbling is not the issue its the flat shape like its been run over by a car.

lol. It was a decent shape and size when I took it from the shelf. I don’t like them too thin. 2 steaks in that pack. It was one of the first items I bought so it was at the bottom of one of my bags and it’s had a load of other heavy items dumped on top of it and squashing it out of shape. Don't worry, I’ll Pat it back into shape before cooking it.

I thought it would spring back into shape when the vacuum pack comes off.

With sirloin etc. most people buy the one which looks leanest.

Same with pork chops. I love a really fatty, marbled pork chop probably more than I like steak.

I was trying to show a picture of one with plenty of internal fat. Because most are bred so lean these days that the chops are pure muscle.

It would definably be better with some more fat left on round the top!

I just love a nice pork chop with apple sauce, mash and veg.

Have a look for wagu pork chop, its as you imagine but pork, I saw it in sainsbury i think
