Plasterboard fixings when have solid insulation

The plasterboard fixings I've used previously rely on the cavity being empty so the metal behind the board spreads out to hold it in place. The wall I need to attach some shelves to now is filled with celotex, so I need something different.

Would these be up to the job, or is there something better I should use?

...will be much stronger, and having used 00s, I can't believe they won't pull up tight even with the insulation.

Board fixings will do as long as you know the boards are well fixed and the shelf load is less than the fixing maximum load

If you want a good fixing into the wall behind the insulation then you should consider something like 'frame anchors', as these will tighten without pulling the bracket into the wall
