Plasterboarding a double skin wall

I have a conservatory of which the walls are double skin brick. I want to plasterboard the walls and then skim the surface.

I have ruled out dot & dab adhesive due to the potential for moisture to be absorbed by the adhesive resulting in loose plasterboard. Instead I have opted for treated timber battening, with a DPC strip between the wall and batten, with a vapour check plasterboard over the top. Can anyone highlight issues with this proposal? As there is much conflicting advice online.

Additionally, if running services through the plasterboard (electrics and pipes) won't this void the vapour barrier? If so, what is the best approach to this?

Stick insulated plasterboard on with foam. Mechanical fix through that.
Or
Dpc timber and fix on wall. Screw foil backed plasterboard on timbers is another option
