Plastering advice

New to all this....
Just bought a house and gutted it.
Needs some plastering doing to all the house. Have old plaster board on ceiling. do I board on top or do I rip down and put on new plaster board then plaster?? Which will give best finish??
Also some wall are back to brick so would u guys board on bricks and then plaster or bond on brick and then plaster i want the best finish! Possible

ceilings - remove old boards and counter batten at 90 degrees to the joists at 400mm centers, pack the battens to make they level because I will eat a chocolate hat if your joists are level and all in line

walls - there are many options, myself, I like batten and board on walls too, gives you room to hide pipes and cables with so much ease plus you can get the walls super true straight and square and get some extra insulation in there.

- The most durable finish would be sand and cement with multi finish over, this will be strong and durable, you could use hardwall instead, or bonding, or browning as a replacment to the sand and cement

- dot and dab is the quickest method and you can get a good straight finish with it too.
