We have had our external door repositioned and are now left with a door frame shaped gap. Worse the once external part is plaster and lath at the ceiling and there's a difference <10mm between the internal and external walls.

I'm thinking plaster board to fill the old door frame, but don't know where to start with the walls and ceiling. The plasterer we managed to get out didn't seem interested and has ghosted us...

Ideally the whole area needs a re-skim to blend it in. I suspect the plasterer didn't fancy the narrow working and was not confident of a good finish without doing the whole thing or

For a DIYer it mat be simpler to attach a wide decorative skirting board and paint.

Thinking laterally, you could knock up a faux pilaster relatively simply?

Not quite this elaborate, but you get the idea! :)

Anything more than 1-2cm thick is going to cause an access issue on a hallway that is probably 900-930mm wide.

Presumably you fitted through a door frame before - just line it with door frame timber (normally 1" planed) x a bit narrower than the gap and make good with filler - it only needs to project enough to disguise the difference in plaster thickness. Screw/plug it in and foam the void behind it.
