Plastering. How thin can I go?

I have stripped all the plaster from my kitchen walls - most of it was falling off anyway - and am just about to replaster. The thing is, our new kitchen will only fit in if I apply a 5mm thick coat of plaster to the back wall. Is this going to be too thin? Is it likely to crack or will I get away with it? Any advice would be most welcome.

5mm is too thin for float and set, and way too thin for dab and set, the skimming alone will use up almost 5mm. i know it will be a pain, but maybe you could plaster between and above the units after they have been fitted.
