Are there any rules or conventions about how far from the wall the soil pipe (into which you plan to push the finned end of the pan connector) should project? It's an ugly looking thing so I plan to finish it as near to flush (no pun intended) as is possible.

No long as it's not to short for your pan connector.
Get a long pan connector and measure before cutting the pipe off.
 
You're going to have to get the sh¦t into the soil pipe somehow, what are you going to use to join the two together if a simple straight pan connector won't reach after you've gone and cut your soil pipe off?

The neatest way to do it is with the LONGEST piece of pipe from the wall.
Cutting it close to the wall will need either a flexi (pretty ugly) or TWO connectors (one on the pan, one into your stub of pipe) joined by a piece pipe (also pretty ugly).
