powder vs. ready mix

So, I know I should use powdered adhesive and grout as opposed to ready mix. But now I've got to ask why.

Are the ready mix ones a compound that harden when activated by air (Like PVA glue), and the powdered ones where they harden from a chemical reaction activated by the water (like cement)?

I could imagine this being the case, hence powdered being much stronger, even in wet/steamy environments.

Yes.
A decent pre-mixed is fine to use on tile less than 300mm x 300mm - less mess too.
