Practice Mortar

Or whatever the proper name is... Ages ago, I did a diy-er's bricklaying course in a college. The mortar we used didn't have cement in it (I think), so every session, we pulled our walls down and shovelled the goop into a mixer for next time.

I want to play around with some stone work. Any ideas what mix might do such a job?
