I'm trying to keep costs down as much as I can so I want to try and prep the room as much as I can ready for the plasterer to skim everything.

What would be the best way to patch up these from where a walls been removed? Plasterboard to fill the gaps and then scrim the edges?

How deep are the holes?
If more than 15mm, yes dot and dab in 12.5mm plasterboard. If less, maybe you can use 9mm plasterboard. If plasterboard won't fit in then use bonding coat to fill them flush to the surface and the plasterer will then be able to skim over the whole lot
