What would need doing? Rafter was cut to create opening, would a new rafter be fitted to existing cut one?

If the width of the opening is greater than say 600mm then you would simply cut and fit a piece (centrally) of say 100mm x 50mm timber and then felt, batten and tile over.
 
Any rafters that have been cut you can sister new rafters to the cut ones once you have taken the frame out.

There won't be any need for 'sistering' as the structural side of things should be taken care of via the trimming.

Infilling should be all that is necessary.
