routing pipe in stud wall

I want to put a shower in bedroom I am changing into an en suite, I have building regs approval and everything. However what is the best way to route 2 pipes up to the middle of a stud wall for the shower?

I have used plastic 15mm up to now and it is routed at the bottom of the wall. Should i change to copper and channel to sections up the stud wall as the plaster board is 25mm thick so should get enough out for the pipes to fit in. then put a 90degree soldered connection in to come back out the wall for the shower mixer to connect.

Or is the best way to go up and behind the plaster board? If so how do you get your connection to bring it back out at 90degrees?

If I haven't explained it very well I will try again.
