I have a choice of quick drying, cement based screed, and a standard "plaster" based screed which is slow drying and requires sanding if you want to put tiles over, but cheaper.

Are there any things I should be aware of? I am leaning towards the quick drying, cement based screed.

Best screeds are normally slow drying and tend to crack less but you do need to keep of them for a decent length of time. Fast screeds do tend to crack depending on thickness and if bonded or not. If you are tiling over it is less critical.

Mapei top cem can be tiled over in as little as 24 hours.

it should be mixed with a screed pump or forced action mixer not drum concrete mixer ideally
