Seating fireplace

Hello

I bought a renovated victorian cast iron all in one fireplace and had it installed by a local chap which was bodged. The fireplace was to be put where an old fire had been ripped out some time ago so there was just a hole in the chimney breast.
What he has done is just bolt the fireplace to the wall and it looks wrong and is not set into the wall as I think it should be and has fairly sizeable gaps around between the fireplace and breast, so is not airtight so cannot have a wood fire.

I want to sort it myself and I have done a bit of research and this is what I plan to do is take off the fireplace, with a bolster chisel cut around the fireplace shape into the plaster of the chimney breast. What I need, I think is some stuff to spread into the recess to seat the fireplace in to make it airtight. I'm figuring its got to be some gunky sort of stuff that sets but I don't know what that might be? Anyone suggest a product? Once the fireplace is airtight seated back in, then rebolt it to the wall and plaster finish around.

Is this a good way to do it? and what is the gunky stuff I need to buy?
Have I missed anything?
