single or double switch?

I want to replace a double socket in the kitchen, which is part of a ring circuit.

I've had a look at the one I'm after but it comes in either single pole or double pole, how can I tell which one I need?

That will be referring to whether the integral switches are single pole or double pole. Either type will be fine.

SP switches always used to be the norm. DP switches have been promoted somewhat in recent years, but aren't necessary.

Why? One side of the supply is earthed, just as with TN-S or TN-C-S.
