Single tile splashback

Can anyone give me some recommendations on tile adhesive and grouting for just 1 single tile used as a cloakroom toilet basin splashback. I'd prefer separate products as I've heard the combined aren't great.

I'd obviously like to buy the mapei which looks to be the better kit but for a 800x600, its well overkill for a large bag I'll never use.

I may be crucified for this, but for a single tile, why not try Pinkgrip, or another grab adhesive?
