I have a stud wall to built for a 800mm shower so I kind of making a U. What size should I make the distance between the walls to fit a 800mm tray? 805mm? Thanks

Sounds about right.
Don't forget to allow for your backer board on to the studding, but not the tiles. The tiles would normally run down and sit on top of the tray.
Be sure to get your uprights of studding in the right, predetermined position, for affixing later things like the screen, shower rail and shelving etc.
