stainless steel splashback and upstand 1mm or 10mm?

Hi, getting out kitchen redone (new doors and worktops), will need to take off the tiles from the walls as a couple have become loose/cracked over the yrs, we have looked at getting splashback and upstands made to order as the splashback seems to be a non-standard size, we have come across one company on the internet who can do made to measure and dont seem too badly priced (although have just started to research these) but to get to the point, they sell 2 versions, one is 1mm thick as a flat sheet, the other is 10mm thick and is mdf backed (presumably 1mm steel and 9mm mdf) now I think the thinner may look sleeker but the thicker might be easier to apply if walls not straight?? anyone have any thoughts on this? which would be best?
