Stanley Super Star oil-fired cooker & central heating - thermostat

We have an old Stanley that has started misbehaving. We believe it is the main thermostat and are able to order one but cannot find any info on how to fit a new one. The temperature probe seems to disappear into inaccessible areas of the cooker. Does anyone know how to replace this?

More information please which cooker? 60.000 single burner 80.000 twin burner?
Which thermostat ? Heating? Oven? There are high limit stats as well.

Super Star 60 single burner. The heating thermostat isn't cutting out and it overheats.
