temperature sensor

Inside my boiler a couple of years ago, I noticed what appeared to be a temperature sensor on one of the pipes. It was clamped on to the pipe and in between it and the pipe there was a substance that looked very like sudocreme. it had two wires coming out of it connected to the internals in the boiler.


Now inside my coffee machine, I notice a very similar item on top of the water heater. It is about the size of a pennny and once again has that white creamy substance smeared in between it and the surface of the boiler.

Is my assumption correct that it is a temperature sensor (it has two wires coming out of it just like the boiler) and what is the white creamy stuff? if you can point me further information, I would also be grateful.

yes most likely it is a temp sensor
the white paste is heat transfer paste and it helps conduct heat between 2 metal surfaces
 
Thanks Kev, any idea what the resistance should be of a temp sensor?
