I’ve replaced a electric oven with a gas and now have the old cooker cable popping out of the back wall. It has an isolation switch. I would like to keep the wiring in case we ever switch back to an electric oven.

Am I okay to terminate this into a 60amp junction box and screw to the wall?

Yeah. Or you could use a 13A single socket or cooker outlet plate.
