Thermostat on hot water tank??

We are replacing the hot water tank in an indirect heating system, and have purchased the tank coated in insulation plus a new emmersion heater.
We have removed the jacket from the old HW Tank to get a proper look at the inlets and outlets, and have noted that there is a thermostat attached to the side of the HW Tank. (control point comes out in the hall.)

I guess that this checks the temperature of the water in the tank and turns the boiler on or off as required.

Fine, shouldn't be a probelm, as we will just attach the new as the old was currently laid out. However, this thermostat is directly against the copper of the tank. Should we cut a hole in the insulation of the new tank? (but this defeats the purpose of insulation????) or any other suggestions?
