Tiling adhesive with expired date - usable?

I have some interior floor adhesive for use on cement screeds with granite and ceramic tiles but the date of expiry has been passed. The adhesive has been kept packed, covered, off the floor and in cool and dry conditions.
Is it possible to test if it is still usable and whether it will perform well in the future?

I forgot to add something that may answer the question: these tiles are going on a screed with piped/wet Underfloor heating. Is it necessary to use flexible adhesive? because my adhesive is not.

Treat it like cement. After it's use by date it starts to ball up (which makes it harder to mix) and its performance will deteriorate too. As always, if you use sub-standard product, you get sub-standard results.
