Is there a tool out there that's good for cutting 15mm copper piping with limited (about 20mm) clearance behind it? Getting a square cut with a hack-saw in a hard-to-reach spot feels almost impossible (for me). I want to use speed-fit on the cut end.

20mm clearance behind is gonna be a bit tight 4 a pipeslice i reckon, you got any play in the pipe, what the clearances either side, and why speedfit

gop/multimaster/bosh pmf 180 has a plunge cutter attachment you could do it with.
