I just poured a 30x40 concrete slab for my workshop, worked it with the float, the trowel, and thought it was looking good. That is until the next day I went out and noticed it has some low spots, and its wavy. Now I'm at a loss what I can do to try and get the slab level and even. Any suggestions would be greatly appreciated.

You will not be able to re-apply a coat of concrete on top of the uneven surface. As it will not bond and will in time come away.
The best product to use on low spots that are not too deep, would be a self leveling compound.
As you are in the USA, I would not be able to recommend a product that is used there, as I have never had the chance to use any. But I am sure there will be some available.
