Upstand or not to upstand....?

Trying to decide what to do and any tips welcome.

I will be removing my tiles from my kitchen wall, skimming the plaster and then deciding whether to use glass upstands around the kitchen and a splashback over the hob or just a single row of tiles...long ones....and a splashback or nothing other than the splash back over the hob..a short glass splashback behind the sink.

Thing is where I put nothing what is the best solution to cover any gap and where the wall meets the worktop ?

Also does anyone know where I can get some long tiles that are around 100mm high to use as upstands. The longer the better and in a decent range of colours as well.

Update: Found some Pilkington tiles..black ceramic, 400 x 82 which are perfect.
