Using Travertine/Mosaic Tiles as Coping

We have had our patio area re-designed last summer, new 30m2 patio laid with a built up wall of approx 3ft high and 15-20" deep around the edge of the patio. The idea is for when we have people over they can sit on the wall etc. so it is used as an informal seating area. Last summer worked well but the winter has blown a lot of the render on top of these small walls (exactly as the builder said it would) as we had a smooth rendered finish instead of copings.

We will therefore need to protect the tops of the walls now and I had an idea about natural travertine mosaic tiles, something like these: HERE

General question, would this be a viable option for use as coping and if so what would be suggested mortar for fixing to the wall, and also the mix for the 'grout' finish on these tiles?

I may be thinking of a product that is totally unfit for purpose, but thought I'd ask the group for some reasoned advice!
