apart from visual difference what is the diffrences between a stop cock and a gate valve?

The gate valve has a sluice type of seal, whereas the typical stopcock has a rubber washer seal.

Gate valve for low pressure.
If you are changing a gate valve, just remove it and fit a full flow lever valve.
