Vanity unit pipes

Please see image.

Replacing old vanity with new one with two drawers:-

What is preferred installation for water and waste connections - do I cut out bottom of unit to route pipe work up or do I channel wall behind (breeze block) and run everything up?

Use that space and flexis or pipe work depending on your skill levels/time available and ease of routing. The waste looks like it can be tapped into the existing, in each case no need for chasing as there should be space at the back of the drawers. Just make sure there is a gap or some kind of space for the waste dropppng from the basin between the drawers. Build that gap in if not as supplied or you are diying it

The pipework will not go behind the unit as it fits tight to the wall (the photo shows it away from the wall) and I don't fancy building the unit away from the wall. The only way I can see of getting the pipes to tap and waste is either cutting a hole through the bottom of the unit or channeling out some of the wall behind.

Pipes and waste need to be moved anyway as centre of new unit is in a different position to old one.
 
Problem there is you have purchased a vanity unit that doesn't have a service void. They're more designed for out of the wall services rather than out of the floor.

As suggested, nothing else to do apart from cut a section out of the base. You need to fit the drawers and make sure they don't fowl the pipework when pushed closed though. Hopefully there is enough space at the back of the drawers. The top drawer shaped for the trap?
