Vapour Barrier Installation?

Quick question on re-converting our garage. Its a single skin brick wall, however the plan is to insulate with solid insulation, and then plasterboard on top, however i need to bring the walls in a bit to get over the block nibs.

Is the correct order Brick - Insulation - Stand off framing - Vapour Barrier - Plasterboard?

Trying to figure out if I need a vapour barrier with foil backed insulation board, if I can simply use foil backed plasterboard, or if to just attach plastic vapour sheets to the studs and standard PB on top

Assuming that goes between brick and insulation board due to no cavity wall?

Yes. And avoid any gaps within the construction. Foil taping the insulation joints and frame will do, or either of your other suggestions.
