Velux or fixed rood windows

I am planning on a extension with pitched roof on two sides. There will be 7 roof windows in total. The architect has put them all as velux windows in the plans. However we only need 3 of them opening (the ones near the hob for ventilation). Would it be cheaper and as good to therefore to have the others as fixed windows? If so which brands are good for the fixed windows?
