Where does this come from, I understand the stoichometric mixture

1 volume of methane plus 2 volumes of oxygen is 1 volume of carbon dioxide and 2 volumes of water vapour is that correct?

Where does the water vapour come from if oxygen is a gas made up of oxygen and Nitrogen ?

If your burning a gas methane say and air

They do .

CH4 is Carbon and 4 Hydrogen atoms, 2O2 is two oxygen molecules.

When heated they separate and rearrange in a different order. Nothing is lost or gained, they just move around and release stored energy.

Look at it like this- if you take all the cheese out of a cheese sandwich and all the chicken out of a chicken salad, then put the cheese in the salad and the chicken in the bread, then you now have a cheese salad and a chicken sandwich
