So I was meant to relay our garden slabs nearly over a year ago now however haven't had the time to get to it until now, as the weather is getting better. Had a separate post on a different query (https://www.diynot.com/diy/threads/laying-paving-slabs-in-garden.615167/).

Hopefully as now I am eager to get on with it, is/would there be any benefit to laying down weed control fabric, given I could excavate down a depth of 5 inches to lay it?

If I do lay the fabric, I would also need to hire a compactor most likely to then compact back the soil/sand mix before laying a bed of mortar for slabs.

Any suggestions appreciated!

Very unlikely. What weeds do you suffer from?
Not sure of the name but just general grown in between the slabs as pictured.

Most weeds grow from seeds that are blown in and grow upwards. People don’t seem to understand this and imagine that they have somehow spread underground to appear in the middle of their lawn / drive / etc. There are some weeds that do this - Bamboo for example - but they are the exception. Fabric will do nothing for you here.
