What does this "C" mean on my plans?

There will be a section through the building, shown separately on the plans, labelled "Section C" which shows you a view through the building at that position.
As above. Have a look at your 'section' drawings and all will become clear. It's as if someone has sliced through your building and you are seeing what it looks like at that slice point. Section through A-A, B-B and C-C...and so on.
