Started ripping the tiles off my kitchen wall and I was hoping to paint the wall but its ripped big chunks of the plaster off. Is the only way to get a good finish on this by skimming it?

If you want to paint it mate, then the wall needs to be skimmed.
You can help any future plasterer by removing any material that is proud of the surface though.
