When should I point bricks?

Depends upon the type of brick, the type of mortar and the outside temperature.
On cool days, whilst laying mebbe solid engineers, we would finish laying at say 2:30 p.m. then set out brick stacks for the next day whilst the muck goes off. It is then ready for pointing after an hour or so and we would pull em in before we leaving the site making sure to cover em with hessian sacking.
