Where to site internal gas pipe?

If the gas meter was moved, could I hide the supply on my side of the meter by taking it up inside the cavity, in order to get to joist level where it can continue out of sight? Would the supply pipe on my side be copper?

No, the pipe cannot run in the cavity. A leak could go unnoticed, fill the cavity of the entire building with gas - imagine the results!

The pipe on your side of the meter could be copper, steel or stainless steel (tracpipe), but most likely copper. It cannot be plastic for fire reasons.
