Any reason why some architect's propose extensions with a parapet wall on both sides of the extension but not on the rear facing wall? Surely it looks more tidy having the parapet wall wrap all the way around a single storey extension?

There are a number of reasons/possibilities namely, looks less imposing (IMO), you don't restrict the view from the first floor windows, you avoid having to do a parapet drain behind the parapet and build parapet outlets (you can just drain into a conventional gutter), cheaper, there may be others. But you will have to ask him for his actual reasoning. Though I would be questioning why there are any parapets at all, they're a needless expense that add little architecturally.

Its a better idea to put the new roof over the side walls. There is less chance of water ingress as the roof to back wall flashing can go from side to side. parapet walls have a flat top so there is a problem with making them off to the original back wall of the house also try and work out where your wall cavity insulation joins the roof insulation with a parapet wall.

I had asked my builder to continue the parapet wall all the way around the extension as I liked the idea of coping stones or whatever stone goes on the top, to match around.
Yes you are correct in that it may cost a bit more, but are the problems associated with parapet drains significant enough to not consider it?

Not really, if all done properly, ensure you have at least two outlets though in case one is obstructed.
Do you mean one at each side of the flat roof or two outlets on each side?
Two in total, one at each end of the roof in the same positions he's shown the rwps.
