Will a proper grass roller make the difference?

When I do my final cut I use my old green lawnmower with the roller on the back to create the lines.

Is it worth buying myself a proper steel roller or a modern plastic roller that fills with water to create more prominent lines or am I not really going to get that much of a difference?

Anyone use a roller after cutting?

The theory goes that the heavier the roller the longer the stripe will last.

So a good heavy roller mower should give good finish for at least 3-4 days, a water or sand filled roller like you suggest would be marginally heavier so should be a bit better but obviously an additional process to the cutting.

Your best bet might be to look out for a decent 2nd hand roller mower like an old hayter which you can use to cut and stripe.
