Not sure about wiring regulations, so can I ask if I can replace an old hob with a new one, keeping the old wire as it looks in very good condition, or is this a leckytrician's job?

Yes you can keep the current wiring if it is suitable for this hob.
However, you will need to ensure that the size of the cable's conductors and the MCB meets the manufacturers instructions.
