Tiles on kitchen / bathroom walls

No , personal choice , though makes sense to have water proof covering around wet areas .

What would you suggest for the adjacent wall from a shower bathroom or sink? there's already two standard tiles above the new build bathroom toilet sinks.

I used oil based eggshell in my kitchen. I did however have 6 inch stainless steel up stands and I have glass mosaic tiles behind the hob up to the extractor hood.

The eggshell is hard enough to scrub with a green non-stick sponge.

Bathrooms- provided you have sufficient air extraction, you can use any paint outside of shower splash areas.
