If I put a post where one of these slabs are will need to cut it with an angle grinder or bigger. How do you do this safely? Is this as dangerous as I think?

Any power tool is dangerous
You can cut slabs with a small grinder- probably safer for a first timer than a big one, so long as you take care

What do you need to do? Lift a slab, dig a hole, fit the post and cut the same slab to fit around?
What helps is to have a bag of sand to go under a slab, and don't try to cut all the way through. Cut your line and make it from A to B then go deeper. The slab normally breaks easily

Yeah, cut it to fit around. Is the sand similar to a bit ply so incase you cut through to underside dont blunt blade

The sand is partly as a cushion but also once you've cut the grove it helps absorb impact when you stick a chisel in and whack the slab. The crack should travel along the grove.
