Strange thing to want to do though in this day and age most would use a PC to capture the audio stream digitally.
Echo dots have line level out jacks.

Interesting idea, not sure if permitted with things like Spotify, as it may infringe copyright. However to get the stereo output one would need to do it with both speakers of a linked pair, and work out cable lengths so left and right are in sync.
Likely the problem is not matched to output, speakers can come with varying ohms, 4, 8, 16 are popular, but could be a lot higher.

Doesn't have to be a single resistor; buy a pack and add them together in series til you get the result you want?
