Is there a typical size grout joint used for Indian stone paving? 10mm or 15mm? Cheers

Depends on the product. Agree that 15mm is better for more randomly cut stone, but the precise smooth stuff - 10mm all day...
If they're varying sizes then stick to whatever is needed to make up the smaller ones to the size of the bigger ones. Carefully align two 300mm ones next to a 600mm one, you'll see the intended joint size between the two. Stick to this then everything will be consistent and look right.
